Principle
Maltose (= malt sugar) can be detected with Fehling's solution and so be differentiated from starch. Foods containing starch supply malt sugar on digestion. Maltose consists of two glucose molecules. It is proved that starch is decomposed by the digestive enzyme pytalin to malt sugar.
